• Salmon gravlax, apple / fig / salad
• Roasted free-range chicken breast, simmered seasonal vegetables
• Modern dessert of chocolate, caramel and dried fruits
• ½ bottle of champagne or ½ bottle of wine

SOIREE PANACHE

• Creamy peas, “French-style” garnish, almond milk or finely sliced scallops, young vegetables in a marinade
• Salmon steak cooked with the skin, confit of fennel and rock-fish sauce or French-raised ducking with crushed spices, young golden-glazed turnips.
• Strawberry veloute, lemon glace, crunchy meringues or Modern dessert of chocolate, caramel and dried fruits
• ½ bottle of champagne or ½ bottle of wine

SOIREE BONHEUR

• Duck foie gras marinated in Armagnac, crunchy fruits and vegetables or Shellfish in a delicate “royale” sauce, crab meat with herbs
• Salmon steak cooked with the skin, confit of fennel and rock-fish sauce or Piccata of veal, tomatoes and olives, confit of aubergine
• Chilled almond-milk pudding with soft fruit or Crunchy-Lido covered dark chocolate
• ½ bottle of a brand-name champagne or ½ bottle of wine
